Triple Hitter Muffins

Will loves these muffins. Make a great snack or a healthy dessert! These are a staple in our freezer.


Directions:
1/4 cup vegetable oil (I use applesauce!)
1/2 cup brown sugar

Mix together and then add:

3/4 cup applesauce
1 cup grated carrots
1 cup grated zucchini

Mix together separately:
1 cup whole wheat flour
3/4 cup all purpose flour
1/4 cup bran
2 tsp baking powder
1.5 tsp cinnamon
1 tsp other spice, nutmeg or pumpkin pie spice
1/2 tsp salt

Add dry to wet, and stir until just mixed. I use a whisk as to not over combine.

Pour into mini muffin tin.

Bake at 400 degrees for 18 minutes.

Veggie Pancakes

Savoury and yummy. Will gobbled up 2.5 of them for lunch. I ate the rest with ketchup!

 Directions:
Grate 1 carrot and 1 zucchini
Whisk an egg and 1/4 cup of milk together, then add to the vegetables
Stir together 1/2 cup of flour, 1/2 tsp baking powder, 1/2 tsp salt, 1/2 tsp onion powder and 1/4 tsp garlic powder
Add dry to wet
Cook on a hot griddle like you would regular pancakes!

Baked oatmeal bars

Very yummy and kid friendly! These are chewy, not crunchy

Ingredients:
1 1/2 cup rolled oats
1/2 cup chopped nuts/seeds
1/2 cup chopped dried fruit
2 tbsp ground flax seed
1 tsp cinnamon
1/4 cup applesauce
A few tablespoons of local honey
1 egg
1 cup skim milk

Mix dry ingredients
Mix wet ingredients
Add wet to dry and mix well
Line a cake pan with parchment paper and pour oatmeal batter into it
Bake at 350F for about 40 minutes

Banana pancake bites

Very toddler friendly


First, make your favourite pancake batter.

This is mine:

1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder

  • 1 teaspoon salt

  • 1 tablespoon white sugar

  • 1 1/4 cups milk

  • 1 egg

  • 3 tablespoons butter, melted


  • In a large bowl, mix together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.     

    Slice one or two pancakes into thin slices. Pour 1/2 tbsp pancake batter onto frying pan, then place one slice of banana, and top with another 1/2 tbsp batter. Flip when the bottom of cooked. These pancakes take a bit longer to cook than regular pancakes.

    Best ever homemade bread



    Mix 1 cup warm water (45C), 2.5 tbsp white sugar (do not stir) and 2 1/4 tsp yeast

    Let sit. Stir briefly after 10 minutes.

    Add:
    1/4 cup EVOO
    2 cups whole wheat bread flour
    1 cup all purpose flour
    1 tsp salt

    Use the breadmachine's dough function.

    Once finished, pound briefly on a floured surface then let rise in a warm area.

    Bake at 350F for 25 minutes.

    Veggie pizza bread

    A great kid-friendly lunch, or partner with a soup for dinner



    1 c Flour
    1 1/2 tsp Baking Powder
    1 tsp Italian Seasoning
    1/2 tsp Garlic Salt
    1/4 tsp Baking Soda

    1 Large Egg, beaten
    1/4 c Milk
    2 tsp Granulated Sugar

    1/2 C Grated Medium Cheddar Cheese
    1/4 C chopped Roma Tomato, seeds removed
    1/4 C Grated Carrot
    1/4 C Grated Zucchini (with peel)
    2 tbsp Diced Red Pepper
    2 tbsp Sliced Green Onion

    Combine first 5 ingredients in medium bowl. Make a well in centre.

    Combine next 3 ingredients in small bowl. Add to well.

    Add remaining 6 ingredients to well. Stir until just moistened. Spoon into mound on greased baking sheet. Bake in 375F oven for about 25 minutes until golden and toothpick inserted in centre comes out clean. Remove bread from baking sheet & place on wire rack to cool for 5 minutes. Slice into biscotti type slices. Serve Warm.

    Seriously good blueberry muffins

    I came across this recipe and oh yum, they are delicious!



    INGREDIENTS
    1 1/2 cups all-purpose flour
    3/4 cup white sugar
    1/2 teaspoon salt
    2 teaspoons baking powder
    1/3 cup vegetable oil
    1 egg
    1/3 cup milk
    1 cup frozen blueberries

    Optional: 1 tsp of cinnamon or lemon/orange zest
    DIRECTIONS
    1. Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.

    2. Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.

    3. To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.

    4. Bake for 30-35 minutes in the preheated oven, or until done.
